FRAGRANT GLUTINOUS RICE WITH DOLLEE KAYA (PULUT TAI TAI)

Ingredients
  

  • Dollee Kaya
  • 600 g Glutinous Rice
  • 300 ml Coconut Milk
  • 200 ml Water
  • 2 tbsp Salt
  • 50 ml Blue pea flower water / diluted blue food colouring Optional
  • Pandan Leaves / a few drops of Pandan flavouring Optional

Instructions
 

  • Wash glutinous rice to remove excess starch & soak overnight.
  • Lightly spray an 8” square tin with vegetable oil.
  • Pour in drained glutinous rice, coconut milk, water, salt & mix well. Add in Pandan Leaves/flavouring if desired. Ensure all rice is covered with the liquid. 
  • Steam for 20 minutes. Remove pandan leaves & fluff up the rice. Pour in blue pea flower water/diluted blue food colouring (in patches).
  • Fluff up the rice again & steam for another 15-20 minutes until cooked.
  • Remove pan from steamer & press the rice flat until it is well compressed & allow to cool.
  • Slice & serve with Dollee Kaya.
